Finding my Way ...

This is the way that I have taught myself how to make bread......usually you make the dough let it rise put it into loaves let it rise and then bake so there is 2 risings on the dough. The way that I do bread is there are 3 risings which makes it even better.I call this stage the sponge stage and it is at the very beginning.I make a dough that is the consistency of porridge and let it rise and then finish adding the flour and let it rise again and then form loaves or buns and let it rise again and then bake.........this takes longer but it is so worth the effort. The bread is just that much lighter and not so yeasty. Try it next time you make bread.......
